Salad. Most people will want to stop reading there, but that would be a mistake. This Greek salad is anything but boring and insubstantial; rather, its many ingredients provide a full range of flavors and textures that will leave you satisfied.

Crisp romaine lettuce forms the base of the salad, but the magic of the salad comes from its many toppings: assertive red onions, peppery radishes, juicy tomatoes, cool and refreshing cucumbers, sweet-tangy peppers, crunchy celery, savory feta cheese, briny Greek black olives, meaty anchovy fillets, fresh parsley, and pickled capers. Basically, there’s something to activate every taste receptor.

Spicy Harissa Hummus with Olives and Homemade Pitas

I’ve been a fan of harissa ever since my honeymoon in France where we ate Moroccan olives flavored with the Tunisian chili paste. I love how it spices up a dish and gives it a nice, smoky flavor. Today I made a spicy harissa hummus drizzled with olive oil and sprinkled with chili flakes. It was amazing!

Lately, I’ve been making more of an effort to incorporate beans into my diet and hummus is a great way to do this. It’s perfect for snacking and is a wonderful way to transform chickpeas into a delicious dip. You can serve it with celery, carrots, fresh pitas, pita chips, or any other tasty chip or vegetable.

Tabouleh (Burghul and Parsley Salad)

Tabouleh, burghul and parsley salad, I recently featured two recipes with pancetta, after all what’s not to love? However, this week I want to present a tabouleh recipe to show that vegetarian food can be equally delicious and fulfilling. This healthy and flavorful tabouleh stems from the Middle East and consists of burghul, parsley, scallions, mint, and tomatoes tossed with a lemon vinaigrette. Burghul is a type of whole grain wheat, making this salad extra nutritious. The herbs add freshness to the salad, while the tart lemon juice counterbalances the sweet tomatoes. Serve this tabouleh with pita chips and hummus for a complete meal!

Hummus is one of the oldest foods in the world. In fact, it is believed that chickpeas were  being cultivated over 7000 years ago in theMiddle East. The exact origin of hummus remains a mystery, since its long history. However, it is most often theorized as coming from the Middle East. The name hummus actually means chickpea in Arabic. You might also hear chickpeas referred to as garbanzo beans, which is the Spanish translation. There are endless variations of hummus and today I present you with one of my favorites: Red Pepper Hummus.
