What Is Kombucha?

Kombucha is a fermented tea made with a SCOBY (Symbiotic Culture of Bacteria and Yeast). Once the kombucha has finished fermenting, this SCOBY is removed, then the kombucha is strained—though some is sold unfiltered—and bottled.
