Thai Chicken Satay with Peanut Sauce

Thai chicken satay is one of my absolute favorites! After grilling or broiling these strips of well-marinated chicken, the resulting dish is smoky, moist, and delicious. The peanut sauce only adds another dimension to this complex and satisfying meal.

The key to great Thai chicken satay is marinating the meat for several hours using a sweet, salty, and spicy marinade. (Spicy in the sense of flavorful, not hot.)

The marinade consists of lemongrass, shallots, garlic, red chilies, ginger, turmeric, coriander, cumin, soy and fish sauces, brown sugar, and vegetable oil. This is quite the panoply of ingredients, but trust me, the result is worth it! read more

When dining out I prefer authentic establishments that highlight regional flavors and fresh ingredients. I love Raku in Las Vegas which features authentic Japanese cuisine and I’m a huge fan of Tony Hu’s Chinese restaurants in Chicago widely known for their regional authenticity. I love that food has the power to transport you to other places—moules marinières always takes me to France where Corey and I spent our honeymoon and whenever I eat kimchi-bokkeumbap I always imagine eating in a snack-food restaurant in Korea. read more

Chinese Egg Rolls with Pork

Chinese Egg Rolls with Pork

These Chinese egg rolls with pork are amazing! Every year for my birthday my family makes me a Chinese dinner featuring these egg rolls, shrimp toast, mu shu pork, sweet & sour pork, pan-fried dumplings, cubed steak, Mongolian beef, fried shrimp, and beef and broccoli. It’s an all-day affair and everyone pitches in to help. The crowd favorite are these Chinese egg rolls with pork.

My grandfather learned a lot about Chinese cooking from Shu-min Hsieh—a Chinese immigrant who came to the US in 1963. She taught Chinese cooking classes in Gainesville, FL from 1970-1990 to increase awareness about Chinese food within the community. I know her recipes are much appreciated in our household and we have  incorporated them into our family traditions. read more

Classic French Mussels in White Wine Broth

Classic French Mussels in White Wine Broth

Oh France, how I miss thee! France was a decadent dream filled with delicious delights and exquisite sights. Whenever I start longing for Europe, I peruse my trip diary and re-create something we ate there.

We had these classic French mussels (moules marinières) on our second night in Noyon, following our wonderful dinner the night before. These classic French mussels are steamed with garlic, shallots, parsley, white wine, butter, and cream. As they cook, their shells open and they absorb the rich flavors of the broth. read more
