White Truffle Oil Mac and Cheese with Rosemary

My first experience with truffle mac and cheese was at Clusters & Hops, an excellent restaurant in Tallahassee that features unique dishes like Parmesan-crusted ostrich filet and espresso-crusted filet mignon with wild mushrooms and Cognac caramelized onions. But my favorite dish of theirs (and one of their signature dishes) is truffle mac and cheese. A blend of cheeses and truffle oil–the exact varieties and proportions of which they jealously guard–gives it a silky smooth texture, a wonderfully intoxicating truffle taste, and leaves you craving more as soon as you take the last bite. read more

When dining out I prefer authentic establishments that highlight regional flavors and fresh ingredients. I love Raku in Las Vegas which features authentic Japanese cuisine and I’m a huge fan of Tony Hu’s Chinese restaurants in Chicago widely known for their regional authenticity. I love that food has the power to transport you to other places—moules marinières always takes me to France where Corey and I spent our honeymoon and whenever I eat kimchi-bokkeumbap I always imagine eating in a snack-food restaurant in Korea. read more

Applebee’s Copycat Recipe: Fiesta Lime Chicken

Applebee's Fiesta Lime Chicken Copy Cat RecipeFiesta Lime Chicken with Salsa Fresca and Mexican Red Rice

I love the Fiesta Lime Chicken at Applebee’s. It’s tender, juicy, and flavorful. I’ve been making a copycat version of this signature dish for a while now, and it’s quite good. I’ve even had a few friends request this meal on their birthdays. Broiled chicken is served atop crispy tortilla strips, alongside salsa fresca and Mexican red rice. The chicken is covered with a mildly spicy ranch sauce and melted cheese. Lime slices add some zest.Applebee's Fiesta Lime Chicken Marinade read more

Revolution Brewing – Chicago, IL

Revolution Brewing Coaster

Meet Revolution Brewing—a gastropub with savory grub and a broad selection of craft beers brewed here in Chicago. Their slogan, “come for a beer and join the craft revolution,” surfaces in the pub’s design and iconography. Take, for instance, the creative titles of their excellent house brews: anti-hero IPA, coup d’etat, mother of exiles, and local hero, to name a few. Trust me, these beers deserve their powerful names. And after having a few at the pub, you can purchase growlers (large glass containers that contain about six beers) to take home with you! read more

Santouka Ramen Chicago

Santouka Spicy-Miso Ramen

I can’t seem to get enough Japanese food of late—I blame Raku for reminding me just how delicious it can be. Corey and I recently went to Mitsuwa Marketplace, the largest Japanese grocery store in the Midwest. It’s located in Arlington Heights, Illinois, a suburb of Chicago.

This market is a gem for Japanese food enthusiasts—chefs and diners alike. It boasts a wide selection of sushi-grade seafood, fresh produce, and dried goods and snacks, as well as a liquor store, bookstore, bakery, video store, and various food vendors. read more
